My Texas Sage (3 feet x 3
feet) was doing beautifully one day. The next it started to wilt and die. Help!

That doesn't sound good, does it? About the only thing that will affect a shrub in the manner you describe is root rot - from overwatering or poorly draining soils. Dig down around the roots and see if you find dead or mushy roots. While you're there, check the main stem(s) of the plant for signs of boring insects or physical damage. Wish I could offer more information.
