ONCE A GREEK OREGANO PLANT FLOWERS IS IT STILL EATABLE?

You can still use the oregano leaves but they will become bitter as they age. Try to keep your oregano pinched or pruned back to keep it from flowering. It will last longer this way and the leaves will be nice and tender. I'd prune off the flowers now to encourage tender new growth.
