We're having 100+ degrees weather here in Texas, and the leaves are dying off quickly. I'm watering but they're still dying off. What can I do to save them? Am I watering them too much or not enough??

If you've recently planted your euonymus they are probably going through some transplant shock and may lose even more leaves until the weather cools. You can prune them back in the spring to remove the dead and damaged plant parts. In the meantime, water them deeply every 3-4 days to help them establish and then cut back on the water applications towards the end of August. By then the roots should be established and you should be able to water only once a week. Best wishes with your shrubs.
