Most vegetable plants need about an inch of water per week. If you apply water slowly so it percolates down into the soil you'll encourage deep roots which will give your plants an edge when it comes to hot weather. I water my veggie garden twice a week, about a half inch of water each time. Yellow leaves on the bottom of veggies are usually just natural aging of the oldest leaves. Pull them off the plant as they appear. As long as you're getting new growth, the plants are fine inspite of the yellowing leaves.
