I have eggplant and would like to know at what size do you pick them off the plant?

You can harvest eggplant after they've developed color. Some eggplant varieties will grow 8-9 inches and others are mature when only 3-5 inches long, so size isn't always a good indicator of maturity. If you begin harvesting now, you'll encourage your plants to produce additional flowers and fruits.
