Jalapeno Harvesting - Knowledgebase Question

I am growing Jalapenos for the first time and have been rewarded with healthy plants and lots of peppers! How do I know when they are ready to be picked? Do they need to be pickled before eathing?

Jalepeno peppers can be picked when they're about 3 inches long and still green. They will get hotter as they mature. Eventually they'll turn red if left on the plant. You can pick one or two now and taste them. If they're not hot enough, let them mature a little longer. You can eat them fresh, or preserve them by canning or pickling.
