I have a brick grill that I no longer use but would like to turn it into a water feature, such as a waterfall.

Sounds like a fun project but I'm not sure you can do that - bricks are not water tight so you'll need to line the bricks with a waterproof or rubber mat so water doesn't leak out and you'll need to set a recirculating pump and some PVC piping to direct the water up so it falls back down into the bottom section. Why not sketch your design out and take it to your local Home Depot. Someone in the garden section should be able to help you choose the necessary materials. Good luck with your project.
