| Kohlrabi (Brassica oleracea) is an odd-looking, fast-growing, versatile vegetable related to cabbage and broccoli. The edible part is the enlarged stem or "bulb" just above ground level. It can be eaten raw or cooked. It can also be frozen or stored cool for winter use. Kohlrabi grows in hot or cool weather so it can be planted in July for a fall harvest, in addition to one or two earlier sowings. (It is about 80 days to harvest.) It does best in a rich, evenly moist soil with plenty of organic matter worked in. It needs to grow fast in order to have a mild flavor. The texture and flavor really depend on the plant always having adequate water; if the soil is too dry the bulb will be dry and woody and in my experience pretty much inedible. |
