Star Jasmine - Knowledgebase Question

I was gone for a week and no one watered my star jasmine, the leaves fell off. So I trimed it back hoping it would start new growth?

You've done the right thing by cutting off the dead plant parts. Now, if the roots are still alive, all you need to do is keep your jasmine watered as usual. You should see new growth in a few weeks. I hope your jasmine makes it!
