Should I remove moss from the soil in my shady garden?

Only if it bothers you. Moss grows where the soil is moist, slightly acidic and shady. It also indicates the soil is compacted but if you do not intend to plant where the moss is growing, you can simply leave it alone. I think moss adds character to a shade garden.
