Can Fruit Trees be 'topped'? We don't freeze often in South Texas, however, several times now the tops of the trees - above the roof of the house - have frozen.

Fruit trees generally have a branching structure that makes the canopy round. Pruning the entire canopy back can be done without harm to yoru fruit trees. Wait until they are dormant (or at least resting) this winter to reduce the size of the canopy.
