Answer: If the pumpkins are not fully mature they won't store for very long. I'd allow the vines to die down completely before removing the pumpkins. Then see how hard the skin is by pushing against it with your thumbnail. If the skin is hard, the pumpkins may keep. If the skin is soft, you'll need to cook the pumpkins.
