How best can I prevent cauliflower from early-bolting in Southern California? Are self-blanching varieties less likely to bolt early than regular varieties?

Cauliflower is a cool-season crop that will bolt when the temperatures get too warm. To avoid, try planting so the heads will mature in the cooler fall months. You can plant in the fall or late winter for a spring crop in your region, or in summer for a late fall or early winter crop. Self-blanching types will keep their white curds without any extra effort from you, but they're still susceptible to bolting in the warm weather. Try growing 'Snow King', 'Snow Crown', 'Alert' and 'Self-Blanche' in your Southern California garden.
