When lettuce is overmature it gets bitter and since it prefers growing in cool spring and fall months, it can become overmature in a hurry during the summer months. Plan on sowing seeds in late summer for a fall harvest. I'm sure you'll see a great improvement in the flavor. With leaf lettuces you can begin harvesting the outer leaves as soon as they are 4 inches long. Pull off the outer leaves but allow the rest of the plant to grow. This way you can harvest over a long period of time and the leaves should be sweet and tender. Enjoy!
