Question: my cucumbers are white not green. why? are they safe to eat? I brought burpee cucumber plants

Answer: Cucumbers can turn white if they are burned by the sun, and the bottom sides of the cukes can be white if they are laying on the ground. If cucumbers are overripe they can lose their green color and turn a ghostly white. You may find the fruits are bitter or mushy if overripe. I'd cut into a few. If the texture looks good and they have a fresh cucumber smell, they are safe to eat. Otherwise, I'd toss them. Cucumbers should be harvested when they are 5-6 inches long. Larger fruits will be overripe. Hope this answers your question!
