On summer squash, should the male flowers (the ones on the long thin stems) that are not producing the vegetable, be removed?

You can remove the male blossoms if you like, but they'll wither and die on their own after a few days. Rather than risk poor pollination, why not wait until they begin to wilt before you remove them? That way the visiting insects will have had a chance to transfer pollen from the male to the female flowers.
