I planted my seeds at the end of June. They are huge leave and the package said mature at 75 days, can I harvest now and cook?

You can harvest your collard greens over a period of several weeks if you just pull off the outer leaves but leave the centers of the plants so they can continue to grow. They will provide you with leaves until the first frost. Just before a heavy frost is predicted you can harvest all the the plants and cook and freeze the leaves or can them. Enjoy!
