I would like to grow creeping, low growing plants; herbs, vegetable, fruit; to replace grass and will provide enough cover to kill out the grass. I have wooly thyme and rosamary started and would like to increase the variety.

You've chosen the best plants already! You might consider Green Carpet (Herniaria
glabra), Potentilla Tabernaemontanii ?Nana?, Hummingbird Flower (Zauschneria latifolia) or Prostrate Germander (Teucerium ?Prostratum?). All grow about 4" tall.
