Now that summer is almost over, when should I divide my iris'? How about sedum? Do I dig up the entire plant and then cut apart and replant?

Yes on both counts. Iris can be dug and divided now. You can break the ends off the rhizomes and replant them, discarding the non-productive center. Sedums can be dug and divided, too. As long as each division has both roots and leaves, they will grow into new plants. Good luck with your garden.
