What makes beans tough and do you have any suggestions for a good variety of stringless pole bean?

Beans will definitely become tougher and stringier if they do not receive sufficient water and if they are left on the plant too long. Harvest your beans when they are smaller, and you'll probably like them better. The pole bean standards -- Kentucky Wonder, Kentucky Blue, Blue Lake, and Romano -- are all stringless when young.
