The good news about sandy soil is that it drains really fast. The bad news is that it does not hold moisture and nutrients so you'll need to water and feed more frequently. Sparce and thin growth can indicate lack of sufficient sunlight, or the need for nutrients. Try feeding your podocarpus with a liquid ferilizer (for fast reaction). Miracle Gro or Miracid will help supply the nutrients they need. In the spring you can prune your plants back to encourage healthy new growth and they should become thicker and denser. As for watering, water as usual and then wait 3-4 days and dig down into the soil. If it is still moist you won't have to water for a few days; if it is dry, it's time to water. Best wishes with your podocarpus.
