How do I know when to harvest beets?

If you're harvesting for fresh eating, you can harvest any time after the roots get plump. If you're growing beets for storage, harvest within 10 days after they reach mature size for the variety (the seed packet or catalog will list the size at maturity). Generally, 1-1/2"-3" diameter roots are ready to pick. Enjoy!
