I just tilled a new garden and added 500 lbs of bagged manure and 500 lbs of peat moss. What should I add this fall to help out for next year's garden?

You've just added a lot of organic matter, so I would not add any more this fall. Give your soil time to break down the material, because it is possible to add too much organic mattter. Then in the early spring, you could have the soil tested and add whatever fertilizer will provide the required nutrients. If the soil still seems too sandy or clayey, you could add some mature compost. Good luck.
