What is the best way to preserve red Chili peppers?

Chili peppers will retain their flavor and heat if you dry them and then store them in an airtight container in a cool, dark location. Simply harvest the peppers and lay them on racks (or string them together and suspend), allowing them to air-dry. Make sure there's plenty of air circulation. When the peppers are crumbly-dry, leave them whole or crush them and store for future use.
