| Chili peppers will retain their flavor and heat if you dry them and then store them in an airtight container in a cool, dark location. Simply harvest the peppers and lay them on racks (or string them together and suspend), allowing them to air-dry. Make sure there's plenty of air circulation. When the peppers are crumbly-dry, leave them whole or crush them and store for future use. |
