Question: How do I know when the peppers are ready to be picked?

Answer: Tabasco peppers will take from 75 to 100 days to mature. They can be picked at any time, from yellow-green to orange-red. As with any pepper, the flavor is best when they're harvested at the peak of maturity. In the case of tabasco, wait until they're an orange-red color.
