I have a couple of Big Jim peppers that were picked before they turned red. Will they ripen? How hot are Big Jim peppers? Should they be eaten when they're green?

Big Jim Peppers are 7-9 inch long when fully grown and will turn from green to red when mature. They will continue to ripen after harvest and become hotter as they change color from green to red. The flavor is pungent, but not as hot as Jalapeno peppers.
