Are Tubers of Ornamental Sweet Potato Edible - Knowledgebase Question

I am growing the ornamental Sweet Potato vine 'Marguerite' as a temporary ground cover. I found huge rose-colored tubers in the ground beneath the vines. Are they edible?

The tubers are edible, but they aren't very good. Most are are quite hard and have a very bland taste. These vines are definitely grown for their spectacular beauty in the garden and not their culinary features.
