I have two incredibly hardy asparagus ferns which are outdoors from May to October, then brought into our basement under lights to survive the winter. Is it possible to put them in a garage (not under lights...drying out)? They don't do well under lights and I wonder if they could go dormant?

Yes you could bring them in and allow them to go dormant. They have underground storage "tubers" which can help the plant overwinter. Just make sure they are not exposed to a hard freeze. Allow them to dry out quite a bit--not totally dry, just barely moist. If they stay soggy, the underground tubers may start to rot.
