Sugar Snap Peas are a cool-season crop that's easy to grow. Most varieties are heavy bearers and can be planted at two-week intervals to prolong the harvest. Edible pod peas take about two months from seed to maturity and can be sown early in the fall or very early in the spring for harvest about 2 months later. Plant seeds one-inch deep and one-inch apart in soil that's 50F - 70F degrees. Harvest when the pods are still flat, before the seeds inside start to bulge.
