What is the necessary size tuber for a potato plant to grow from it?

Basically, any size will do as long as it has an "eye" or two. (The eye is the spot which will sprout when you plant it.) If your "seed" potatoes are large and have many eyes, you can cut them up, let them dry or callous for a few hours, and then plant the pieces.
