Days Until Harvest - Knowledgebase Question

In the description of the vegetables in your catalog, you usually include a number of days, which I assume is the number of days till harvest. My question is, when does the days clock start ticking? When the plant is put in the ground, or when the vegetable or fruit appears? This is really important, since I live at high altitude.

Days-to-maturity is a guideline to help you decide when to plant. You can begin counting from the day the seeds germinate, and you can expect to harvest mature fruits or vegetables by the end of the stated time period. There are some variables, usually weather-related, and you'll need to add time for seed germination (usually one to three weeks, depending upon crop), but for the most part, the plant should produce mature fruit within the days-to-maturity timeframe.
