| Congratulations on your fig crop! Figs will not ripen after harvest, so you must leave them on the tree to ripen fully and then handle carefully to avoid bruising them. As you have discovered, fresh figs do not keep very well and even with refrigeration will only last for a few days. Traditionally, figs are dried for storage. In a dry climate this can be done in the sun or otherwise by using a dehydrator and they will keep for about six or eight months. Enjoy! |
