Ten-Minute Zucchini Pizza
Here's a different use for all that zucchini. Small ones work best.

Preheat oven to 425 degrees. Cut a medium zucchini lengthwise into quarter-inch slices. Pat dry and brush both sides with olive oil. Arrange slices side-by-side on foil-lined baking sheet or pizza pan.

Bake 7 minutes or until just tender when pierced with a fork. Top generously with well-seasoned pizza sauce (any bottled kind you like is fine). Sprinkle with chopped fresh basil, freshly grated Mozzarella and Parmesan cheese and put back in the oven for 2 or 3 minutes, until sauce is hot and bubbly and cheese is melted. Serve immediately.

Ash and Birch Borers
Ash and birch borers continue to drill their way across the northern section of this region. If your tree is already stressed -- and many are after yet another dry winter -- it could be susceptible. Watch for dried-out looking crowns, then check for little pencil point holes in the trunk with sawdust spilling out. Not sure? Call a reputable nursery for the name of a certified arborist who can make a diagnosis. If you want to plant a new tree, choose a different kind.
