I believe I have the same echeveria, or one very similar. When it started getting elongated like this, I beheaded it and stuck it back into the soil. Now, it has rooted and it is thriving again, though it did take a longer time to start producing roots than I expected from other echeverias like PVN. (Well over a month, though this was done in winter when the windowsill temperature was somewhat lower so that was probably a factor.)
As a precaution, if you want to go that route (beheading and replanting) I would let the cut end of the stem dry out for at least several days before planting, to prevent rot. The leaves may shrivel dejectedly for a while but you will know you've succeeded when they start to plump up again.
