My daughter came home with a bunch of leaves (?) from a succulent that she had. She suggested I put them in a sandy soil to root them, which I did.

Now that I have more than a dozen of these plants growing I'm starting to wonder what they are and how big they'll get.

Also, how can we avoid having the leaves drop so readily? They seem to fall easily whenever the plant is moved.

The top photo shows the junior plant in question, circled in yellow.
The second photo shows what I think is the parent plant. (At the time I was really just taking a picture of the pot, so the plant isn't shown fully.)

There's nothing that can be done about the leaves, sorry. If you'd like you can behead the plant, and cut off the beautiful top. The bottom will grow new rosettes and you can root the top in soil!

Thank you for that info. I'll keep that in mind. Would that also apply to a crassula that's lost most of its leaves except the top?

It looks like a Graptopetalum or a hybrid of a Graptopetalum, but I couldn't get much closer than that.

I've been looking at photos of both (xGraptosedum vs Graptopetulum) and can't really decide. Perhaps in the future one will flower and that will help.

I also realize that the young plants don't look particularly 'ghosty' perhaps because they are young, but more likely because they aren't getting enough sun.

As for the losing of leaves, I wondered if in fact this type -- whatever it is precisely -- isn't really a trailing plant (and the losing of leaves is a propagation mechanism). In other words, it's not meant to be a compact upright plant. Any thoughts?

I don't think it's getting enough light. It's more of a "compact, upright, will fall over once it gets tall enough" plant.
