It looks like you are right about it being some kind of Centaurea. I've gone through the database, but don't find one that matches mine. I posted updated photos in the first post.

I finally found the name of this plant. I got it from Wrightman Alpines. Sold under the name of Centaurea bagadensis, correct name is Psephellus bagadensis. I am loving this plant. Thank you all for your help.
