I am just talking off the top of my head here, but to get the excess nitrogen out of the soil, could you just scatter annual grass (oats, wheat, rye?) on the tilled area, wait for it to get fairly big, cut it and feed it to your horse as hay? Or does that not work? Just speculating. And yes, feeling overwhelmed is I think the mark of a good gardener. If you're in total control, you're not doing something right *LOL*. I usually maintain the illusion of control until about end of May. This year, with no winter, and weeds growing nonstop I totally lost control by early April.
I am not "country" I am "landed gentry."

Control? Never in all my years of gardening!

Interesting grass/hay idea, however, I will need pathways between the rows of vegies. Thanks for the suggestion.
Of all the things I've lost, I miss my mind the most.
