What is this weed taking over my Bermuda and how do I get rid of it?

It's hard to see. Can you pull out a tuft and take a closer picture on a plain background?

Difficult as most grass to ID, need close-up photos,
Seed heads in may, could it be Annual Bluegrass (Poa annua)

Your biggest problem is the annual bluegrass. It's very hard to eliminate. Use a pre-emergent in late summer to keep it under control.

The bluegrass will die back as soon as it gets hot. The pre-emergent should break the cycle.
