Here are some thoughts:
Were they rootbound? If so, they could be having problems breaking out of that pot-shaped mold. Although the soil around them is damp, the center of the root ball may be dry.
Or.. It is just too hot and the leaves are transpiring too fast to keep the plant from wilting. Do they perk up in the evening after the sun sets?
Last thought... Are the wilted leaves drying up? Have the tops of the plants grown fast since you transplanted them? If root production is not keeping up with leaf production, the tops will suffer from lack of moisture even though the soil is moist.
