Hello Tina, if it were mine, I will just stick it in dry, very well draining media for now, keep it as warm as you can indoors, and wait for Spring. Your location is in SoCal, so you have better temps than we do here, our winters are mild, but the air gets cold at night. And lately we are having rains, and your cutting since it has no roots yet, must be kept dry.
When our temps in Spring becomes more stable, like overnights not going below 50F, you can carefully bring it out to part shade, let it acclimate to the environment, and wait patiently for the cutting to grow new leaves.
I have not used honey on any of my cuttings, just rootone, or sometimes none.
