Now if that were my Dendrobium and since I have the capability to spray this plant and all the roots daily with ease, I would take it out of the pot, clean it up, but at this point leave the plant with all its new shoots and buds intact. I would find a way to hang this plant, perhaps even keep it bare root.
But, if watering this plant like this is too cumbersome, you might want to anchor it with some fresh bark or cocnut fiber in a basket. I still would hang it.
I would be careful to cut much off, since it is sprouting happily everywhere.
Btw you might add your growing location/ climate zone to your profile please, it will help giving you advise.
Looking at your previous posts, I assume you can grow outside most of the year with some protection or bring it inside for short durations during the Winter? If so, I would surely hang it either bareroot or in a basket outside, get it slowly used to bright light and water daily.
