I am wondering, as I have several that are growing with several shoots. I dont know enough about their growth habits (all info appreciated!), and I grew these from seed. Can I cut the shoots off with a piece of crown and have them survive?

The time may be too late but yes, you can divide the plants. Its best to divide them into chunks of 4 or 5 crowns in early spring just as they start to grow.
