My girlfriend and I are wondering what this healthy looking onion plant is. We live in northern Utah, lots of sun.

You are right, its an onion. When they bloom, the leaves die and the bulb is as big as its going to ever be.

If its an onion that didn't manage to get dug last year, it won't have a bulb. All the energy from the bulb was put into blooming.
