Unusual herbs...medicinal and culinary
Veronica/Speedwell--I used to have the one below grown from seed from GW's annie_nh and would love to find it again: the flowers on the always upright spikes were larger and further apart than V. spicata and it spread quickly (I think I stupidly pulled it out for that reason.) It was beautiful!

Edited to add: Found some old stock of this (collected 2011)...hoping for germination!!
