Have you any experience with wine making?
Most people discussing wine making on the Internet seem to find the most difficult complicated way they can.
I quit making wine some 20+ years ago, when I quit drinking, but I'd imagine that my generic recipe would suit...
I had great success making wine in food grade 5 gallon buckets.
Run fruit through blender with enough water to process, pour in bucket.
You need a least a couple inches of pulp, more pulp means better flavored wine.
Add a bag and a half of sugar. About 7 pounds.
Stir, add clean water to an inch of the top of bucket.
Put lid firmly on bucket, the co2 will find its way out of bucket under lid, and the fruit flies will stay out.
Place in out of the way corner, ideally at a steady temp.
When wine has clarified in a month or 6 or 7 weeks, serve or bottle.
I made a lot of wine with this recipe, it was foolproof. Only problem I ever had was the elderberry wine needed a lot of time to mellow....
And, when you have all the wine you can drink, you may find that you drink a lot more than you should!
