Great article and links, Margaret. I like honey very much but it's something I don't often think of getting in the store.
Last week we were in a small North Mississippi town at a general store and they had some honeys. They had the clover, tupelo gum, possumhaw and sour wood (Oxydendrum) ones.
I chose the sour wood and it's wonderful. Not too sweet, not too bitter/sour. Now that I've told a couple people about it, they are wanting me to send them a bottle each which I'll do next month.
This was packaged by Weber Honey in Savannah, TN and now I'm tempted to get the clover and tupelo gum ones.

It's definitely unique that's for sure. Changes in taste from month to month. I find it interesting that it starts out mild and light in color here then goes to stronger and darker and back to mild and light in the autumn. The taste is different in spring and autumn because different plants are blooming.

Just bought some more honey today. I have to wait until I can get to the health food grocery store in the city to get the local raw honey. I noticed they even have bottled 1-gallon size, but I just filled a 2-pound bottle from the bulk dispenser. That's enough for me.

Honey jars come in all sizes. We are in a rural area where most people's grandparents and parents had honey bees. They expect to see honey in canning jars either pints or quarts and some of it must have the comb in it. I've had someone tell me their dad used to buy it at a flea market and give them the comb for candy.
