Paul, you seem to be the only one on here that cans. Me I never did because it always seems like too much work and now that I am an old lady, I don't intend to start. Rolling on the floor laughing But I really applaude those of you that do for a great job.

I don't can but I occassionally freeze a good buy on fruits.

I can, vinegar, freeze, roast, and dry - though the drying is just with herbs.

I'll be doing at least one batch of pickles this week, maybe two. Dill for sure, since I finally remembered to plant dill this spring, and since we usually use up all of our sweets over the course of the year, I'll probably be doing at least one batch of those too. Big Grin

With the way food costs are going up -- preserving some of the summer harvest is a good way to get

good savings and nutritional value as well as the tastiness factor. Hilarious!

I will post some of my thoughts on the forum and hope to see others over there soon.

You are correct you don't have to grow your own in order to preserve.

Produce is so inexpensive this time of year it's the ideal time to stock up for winter.
Corn and green beans are very easy to freeze. I've made dill pickles, pickled peppers so far this season.
I started Canning my own tomatoes this morning.

Well yes, I agree. If I wanted to start canning I would. But just using age as an excuse not to ha-ha.

I have frozen green beans many, many times. Turn out great. Blanche very quickly and then dunk in ice bath to cool down. Package and freeze.

I've been canning since I was a kid. Helping my family of course, but after I began to have space for a garden, I have continued to can fruits and veggies for years. Last year, I canned 55 quarts of peaches from my tree. Mostly peach halves, and some peach pickles. This year there will be no peaches. I'm running out of tomato sauce, and I hope the tomatoes start coming in soon.

I can, freeze and dry a lot of my fruits and vegetables. I'm drying some tomatoes right now and will probably can some later once I check and see how many jars I have left from previous years. I've been canning for decades, just like my mom used to do. I also make lots of jellies, mincemeat and something called chili that is somewhat like a chutney.

I also make wine from grapes and apples.
