How do you encourage an adenium to branch out? Do you trim back the largest branch as you would a tree or bush?

Supposedly. But mine that want to get tall, the young ones, less than 20 months, just sprout one bud and keep on going up. I haven't tried chopping a notch above the leaf nodes, maybe you can try that.

There are small plants now, staying little like miniature dogs...

Cut the central leader at the height you want and branches will form below the cut.Any that I have unsold at the end of the season get cut and are well branched and ready for sale the following spring.It does take a while.Just to give you a starting point,mine are usually cut about 6-10 inches above the soil line.
