I don't know what type of plant it is, but it started to get yellow and die. It seems to be squishy in some parts and many of the roots fell off when I took a look at it. I was just curious if there was any part of this plant I can cut off maybe to re-pot and have it grow again? I can post more photos if needed.

Without knowing what it is-it is hard to know what is best.
My own inclination would be to cut it off just above soil and repot the root in fresh soil.

Sometimes plants get old and tired too---just like we do!

Your plant looks like some type of Dracaena, although I'm not good with names, I have this plant...it doesn't like to be too wet! (or cold) and you said the roots fell off, that sounds like rot which happens when its too wet. You could let it dry out, these regrow pretty readily, and grow from cuttings, personally if you have new soil I'd replant the root, but also cut off the tops, leaving about 8 inches of stem on each part, then I'd plant the tips in a different pot, keeping it moist for a couple weeks while it grows roots, then I'd move those back into the other pot, that way you'll have a nice full plant come summer! Just my thoughts.
There are many experts on here,and one of them will surely let you know what this plant is called, then I'll know (like I said I have several of these)

One of those thin-leaf varieties, Madagascar (?) "Squishy" doesn't sound so good. Maybe dig it up, let it dry out a bit and try new soil??

Looks like Dracaena marginata.

Unless it's completely rotted, it should grow back. I would unpot, remove all old soil, rinsing it cleanly off. Then trim any too-long, mushy, circling roots, and the tips of the branches down to firm material. Repot with well-draining, non-water-retentive mix, put in lots of light, several hours of direct sun per day. Don't water until significantly dried out (but not yet bone dry.)

Dracaenas are more sensitive to water chemicals than other plants. For this reason, they should never sit in soggy soil, should be flushed occasionally, and tap water may make them ill. If one switches to distilled, rain, dehumidifier condensate, there can be a dramatic difference, healthy improvement, if fluoride, chlorine, or chloramine was making it ill.
