I don't know what all I have offhand since I'm still organizing from a big trade this winter, but the two links in my signature have my seed lists in them - let me know if you see something in particular that you'd like to grow and I can check if I still have it. I know the labels aren't all legible - you'll get some surprises. I was able to get at least something from all the categories you listed except non-melon fruit, and I threw in a few herbs and companion plants as well.
